QUICK, EASY, MINDFUL EATS.

acai smoothie

Acai Smoothie

    • 1 Packet frozen organic Acai (Trader Joe's)

    • 1 1/2 Frozen Bananas

    • 1 Cup Frozen Mangos

    • 2 Cups Organic Coconut Milk

    • 1/2 Avocado for smoothness

    • Drizzle of honey or agave

    • Scoop of Protein Powder

  • Blend all ingredients in a blender and enjoy!

Tempeh BBQ Tacos

  • 1 Packet of Tempeh

    Corn Street Tacos

    Vegan Shredded Cheese (recommend Follow Your Heart brand)

    Avocado

    Lettuce of choosing

    BBQ sauce of choice

    S&P

  • TEMPEH

    Cut up tempeh into 1" cubes

    In a pan, heat EVOO then place the tempeh into the pan

    Sprinkle salt, pepper, garlic powder and onion powder onto the tempeh

    Toss tempeh every few minutes to get all sides browned

    Once cooked, turn off heat and pour BBQ onto tempeh so all sides are covered

    Set aside

    TACOS

    In a separate pan, heat EVOO

    Place taco onto the pan, spinkle cheese onto the taco to melt the cheese

    Once taco is light brown on bottom, remove and place on plate

    Place tempeh onto taco, then lettuce and avocado

    Top with S&P, any additional sauces and enjoy

Summer Stew

  • 1 Onion

    2 Sweet Potatoes

    1 1/2 Cups Swiss Chard

    1 Can White beans of your choice

    1 Can Diced Tomatoes

    1 tbsp. Cumin

    t tbsp. Thyme

    1/2 tbsp. Garlic Powder

    3 Cups Vegetable Broth

    Salt & Pepper to taste

  • PREP:

    Chop onion

    Wash and peel sweet potatoe, cutting into 1" cubes

    Rinse swiss chard and chop into small pieces

    Drain and rinse beans

    Drain diced tomatoes

    SOUP:

    In large pot, add EVOO and saute onion

    Add cumin, thyme and garlic powder

    Saute until onion is transluscent / brown on edges

    Add cubed sweet potatoes and vegetable broth, cover and bring to boil

    Once boiling, turn down heat to medium-low to simmer until sweet potatoes are tender

    Once tender, add all ingredients into a blender and blend until smooth

    Add salt & pepper to taste

    Return contents from blender back into the pot

    Add the white beans, swiss chard and diced tomatoes to the pot

    Bring to a simmer and cook for another 10-minutes until swiss chard has softened.
